<p>Faire revenir le chorizo sans matière grasse dans une cocotte bien chaude.<br />
Ajouter les aiguillettes de poulet, les colorer sur toutes les faces.<br />
Retirer les aiguillettes et le chorizo, réserver.</p>
<p>Dans la même cocotte, mettre les dés de poivron et l’oignon émincé. Assaisonner de sel et de piment d’Espelette. Remuer, et laisser cuire 5 minutes. Ajouter les Haricots Tarbais, laisser mijoter 10 mn.<br />
Gouter et rectiﬁer l’assaisonnement si nécessaire. Remettre les aiguillettes et le chorizo dans la cocotte et poursuivre la cuisson 5 mn.</p>
<p>Servir sans attendre.</p>

<p>Laver et hacher les herbes fraiches, émincer finement la gousse d&rsquo;ail, couper les tomates confites en petits morceaux. Écraser ensemble les fromages de chèvres, mélanger pour les rendre crémeux, ajouter les herbes, l&rsquo;ail, les tomates, sel, poivre, mélanger, rectifier l&rsquo;assaisonnement.</p>
<p>Déposer une feuille de raviole sur une planche et mettre une cuillère à café de farce au milieu. Avec un pinceau, humecter les bords de la pâte avant de la replier en deux pour former une petite enveloppe, appuyer pour souder en prenant soin de chasser un maximum d&rsquo;air. Réserver les ravioles, au fur et à mesure, sur un grand plat légèrement huilé, une à côté de l&rsquo;autre, ne pas les chevaucher.</p>
<p>Égoutter les Haricots Tarbais, les mettre dans le bouillon et laisser cuire tout doucement. Couper les carottes en petits dés et émincer les oignons nouveaux. Au bout de 25 minutes de cuisson, ajouter les carottes et une pincée de sel, laisser encore mijoter, à feu doux, pendant 20 minutes. Ajouter les oignons nouveaux dans le bouillon et y pocher les ravioles 2 minutes. Servir bien chaud avec quelques fleurs de fenouil.</p>

Recouvrez les Haricots Tarbais d’environ deux fois et demi leur volume d’eau et ne vous occupez plus de rien jusqu’au lendemain matin.</p>
<p>Le lendemain : Égouttez et rincez les Haricots Tarbais. Portez un grand volume d’eau à ébullition puis plongez-les-y. Ajoutez une feuille de laurier, quelques branches de thym et laissez cuire 1 heure à frémissement. Égouttez et réservez.</p>
<p>Épluchez et ciselez l’oignon. Faites chauffer dans une cocotte 3 cuillères à soupe d’huile d’olive. Faites y revenir à feu doux l’oignon, puis, ajoutez les lardons, le chorizo tranché en rondelles et débarrassé de sa peau, et la gousse d’ail pelée, dégermée et coupée en petits dés. Faites cuire une dizaine de minutes avant d’ajouter les Haricots Tarbais réservés et de verser la sauce tomate.</p>
<p>Laissez mijoter une vingtaine de minutes avant de servir.</p>

Ajouter les Haricots Tarbais, le bouillon de volaille et le bouquet garni. Cuire à petit feu 1h30 à couvert puis à découvert jusqu’à évaporation au 9/10ème du liquide.</p>
<p>Enlever le bouquet garni et mixer la préparation avec la crème, les œufs, le sel et le poivre. Verser dans des ramequins beurrés et cuire au bain-marie 1h à 110°C.</p>
<p>Désosser le carré filet d’agneau, saler, poivrer et inciser le gras. Confectionner un jus avec l’os et la garniture. Passer, réduire, assaisonner et lier au beurre.</p>
<p>Cuire les blancs de poireaux dans le bouillon, le beurre, les épices, le sel et le poivre jusqu’à évaporation complète.</p>
<p>Disposer les blancs de poireaux à l’intérieur des carrés et ficeler la viande. Colorer dans une poêle avec de l’huile, puis mettre au four 12 minutes à 145°C.</p>
<p>Déficeler les carrés après quelques minutes de pose. Les badigeonner de jus et les rouler dans le pain d’épices réduit en chapelure. Remettre au four quelques instants pour rendre la panure croustillante.</p>
<p>Couper les carrés et dresser avec un flan de Haricots Tarbais, un peu de mâche et de julienne de carotte assaisonnées, et poser le jus autour.</p>

Colorer le carré d’agneau dans une poêle avec un peu d’huile d’olive puis le mettre au four 50 minutes à 180°C.</p>
<p>Émincer les échalotes et les faire revenir dans l’huile d’olive.<br />
Couper le potiron, les carottes jaunes et les champignons en gros cubes et les faire revenir avec les échalotes.<br />
Réserver une partie pour le dressage puis mouiller avec la crème fraîche et laisser cuire 30 minutes.<br />
Mixer la préparation.<br />
Ajouter le tiers des Haricots Tarbais au velouté, assaisonner et faire mijoter une dizaine de minutes.</p>
<p>Dresser le carré d’agneau avec des Haricots Tarbais natures, une verrine de velouté et quelques légumes croquants réservés au préalable.</p>

<p>Préparer un bon fond blanc : faire revenir les pieds, oreilles, queues, couenne et poitrine. Mouiller et ajouter les carottes, oignons, ail, céleri, thym, laurier et le bouquet garni. Porter à ébullition et laisser cuire 1h30.</p>
<p>Blanchir les Haricots Tarbais, les égoutter et jeter l’eau.</p>
<p>Faire cuire les Haricots Tarbais dans le fond blanc 40 minutes. Réserver le reste de fond pour mouiller plus tard.</p>
<p>Faire revenir dans la graisse de canard les viandes, la saucisse, les cuisses de canard ainsi que les couennes, poitrines et oreilles cuites auparavant avec le fond et couper aux dimensions souhaitées. Une fois bien colorés, réserver les morceaux.</p>
<p>Frotter une cassolette avec de l’ail rose de Lautrec.</p>
<p>Remplir la cassolette en alternant une couche de Haricots Tarbais et une couche de viandes.</p>
<p>Laisser mijoter 3 heures dans un four à 120°C. Casser la croûte plusieurs fois au cours de la cuisson et rajouter du fond blanc si besoin.</p>
