<p>Faire revenir le chorizo sans matière grasse dans une cocotte bien chaude.<br />
Ajouter les aiguillettes de poulet, les colorer sur toutes les faces.<br />
Retirer les aiguillettes et le chorizo, réserver.</p>
<p>Dans la même cocotte, mettre les dés de poivron et l’oignon émincé. Assaisonner de sel et de piment d’Espelette. Remuer, et laisser cuire 5 minutes. Ajouter les Haricots Tarbais, laisser mijoter 10 mn.<br />
Gouter et rectiﬁer l’assaisonnement si nécessaire. Remettre les aiguillettes et le chorizo dans la cocotte et poursuivre la cuisson 5 mn.</p>
<p>Servir sans attendre.</p>

Laver, nettoyer et éplucher les légumes. Émincer les oignons et les gousses d’ail. Tailler les<br />
carottes en rondelles. Tailler en morceaux le poivron et le fenouil.<br />
Dans une cocotte chaude, faire revenir les oignons et les gousses d’ail dans l’huile d’olive.<br />
Lorsqu’ils sont fondus, ajouter l’ensemble des légumes, laisser cuire 5 minutes en mélangeant<br />
régulièrement.<br />
Saupoudrer les épices, couvrir d’eau, ajouter les Haricots Tarbais égouttés. Mélanger et<br />
laisser mijoter 1h30, en salant à mi-cuisson.<br />
En ﬁn de cuisson, goûter et rectiﬁer l’assaisonnement si nécessaire.<br />
Servir ce tajine accompagné de semoule.</p>

Tremper les Haricots Tarbais une nuit (la veille) dans 2 fois et demie leur volume d&rsquo;eau froide.<br />
Le jour-même, jeter l&rsquo;eau et égoutter les haricots.</p>
<p>La soupe :<br />
Peler l&rsquo;oignon et la carotte, les couper en petits dés et les mettre dans une casserole.<br />
Peler et dégermer l&rsquo;ail, l&rsquo;écraser et l&rsquo;ajouter au reste.<br />
Ajouter l&rsquo;huile et faire revenir le tout à feu moyen.<br />
Ajouter les lardons et les faire revenir en remuant de temps en temps.<br />
Ajouter les Haricots Tarbais et le bouquet garni,<br />
Recouvrir avec le bouillon, saler selon votre goût,<br />
Couvrir la casserole et laisser mijoter 1h30 à feu doux.<br />
Au bout de ce temps, ôter le bouquet garni, verser 1/3 de la soupe dans le bol d&rsquo;un mixeur plongeant et la mixer jusqu&rsquo;à obtenir une crème lisse, réserver.<br />
Remettre les 2/3 restants de soupe sur le feu, la recouvrir à nouveau avec le bouillon, porter à ébullition.<br />
Dès ébullition, verser les pâtes dans la soupe et les faire cuire à découvert, le temps indiqué sur le paquet (environ 9 minutes).<br />
Une fois les pâtes cuites al dente, verser la crème de Haricots Tarbais précédemment mixée dans la soupe, mélanger.<br />
Servir la soupe chaude, y ajouter un filet d&rsquo;huile d&rsquo;olive extra vierge au moment de la déguster.</p>
<p>LE + DE SILVIA :<br />
Tous les types de pâtes courtes s&rsquo;adaptent à cette préparation, selon les goûts.<br />
En Italie on en utilise des plates, ou on coupe en morceaux des pâtes longues (linguine, tagliatelle sèches, etc.) ou bien on fait un mélange des pâtes de différents formats.<br />
On peut saupoudrer la soupe avec du parmesan râpé avant de la déguster, selon les goûts ou encore la saupoudrer avec des morceaux de châtaignes cuites, quand c&rsquo;est la saison.</p>

<p>Enlever la peau du conﬁt, détacher la viande des os et hacher le conﬁt au couteau.</p>
<p>Dans une poêle, faire fondre 2 minutes les échalotes dans 1 cuillère à café de graisse de canard. Ajouter le conﬁt et mélanger. Assaisonner de piment d’Espelette et de sel.</p>
<p>Égoutter et rincer les Haricots Tarbais, les ajouter dans la poêle ainsi que le persil, mélanger.<br />
Goûter et rectiﬁer l’assaisonnement si nécessaire.</p>
<p>Préchauffer le four à 180 degrés.</p>
<p>Couper 4 feuilles de brick en 2. En haut de chaque1/2 feuille, déposer une grosse cuillère de farce. Rouler la feuille autour de la farce en faisant un tour, puis rabattre les deux côtés vers le centre. Continuer de rouler. Déposer les croustillants sur la plaque du four recouverte d’un papier sulfurisé.<br />
Enfourner pour 20 minutes à 180 degrés.</p>
<p>Servir avec une salade.</p>

&#8211; 1 blanc de poireau<br />
&#8211; 1 l de bouillon de volaille<br />
&#8211; 1 noisette de beurre<br />
&#8211; 2 c. à soupe d’huile de noisette</p>
<p>Pour la mousse de parmesan :<br />
&#8211; 80 g de parmesan râpé<br />
&#8211; 20 cl de lait<br />
&#8211; 20 cl de crème liquide<br />
&#8211; Sel au piment d’Espelette<br />
&#8211; Sel et poivre (facultatif)</p>

Veiller à ce qu’il y ait toujours plus d’eau que de haricots.</p>
<p>Peler l’oignon, l’émincer et, à feu doux, dans une casserole, le faire fondre doucement dans le beurre.<br />
Ajouter le blanc de poireau lavé et coupé en rondelles. Cuire environ une minute en remuant.<br />
Jeter l’eau de trempage des Haricots Tarbais, les mettre dans la casserole et couvrir avec le bouillon. Porter à ébullition, baisser le feu et cuire environ 40 à 45 minutes à petits bouillons.<br />
Égoutter les Haricots Tarbais, en réserver quelques-uns et garder le bouillon de cuisson.<br />
Au blender, mixer les haricots avec le lait et un peu de bouillon, ajuster la quantité de bouillon jusqu’à l’obtention de la fluidité désirée.<br />
Remettre dans la casserole, verser la crème et donner un bouillon.<br />
Incorporer l’huile de noisette, mixer à nouveau.<br />
Assaisonner de sel et de poivre blanc.</p>
<p>Pendant la cuisson de la crème de haricots, dans une petite casserole, chauffer doucement le lait et la crème avec le parmesan râpé.<br />
Remuer, jusqu’à ce que le parmesan soit parfaitement fondu.<br />
Émulsionner au mixer et réserver au chaud.</p>
<p>LE + DE MAMINA :<br />
Servir très chaud en disposant les Haricots Tarbais entiers réservés, et en assaisonnant de sel au piment d’Espelette.<br />
Présenter la crème de parmesan à côté, chaque convive se servira à sa guise.</p>

<p>Préparer le beurre pour les St-Jacques. Ciseler les herbes. Dans un bol mélanger le beurre mou avec le parmesan râpé, les herbes ciselées et la chapelure. Saler et poivrer. Réaliser un boudin et le placer au congélateur 15 minutes.</p>
<p>Préchauffer le four en mode grill à 250 degrés.<br />
Pendant ce temps, mixer les Haricots Tarbais en ajoutant le lait jusqu’à obtenir la texture souhaitée. Assaisonner.</p>
<p>Découper en rondelles le beurre aux herbes et mettre une rondelle sur chaque St-Jacques.<br />
Faire griller les St-Jacques au four 3-4 minutes jusqu’à que le beurre soit gratiné.</p>
<p>Servir aussitôt accompagné de la purée de Haricots Tarbais.</p>

<p>Le jour J, mettre les Haricots Tarbais égouttés à cuire dans un grand volume d’eau froide avec 1 échalote et 1 gousse d’ail. Porter à ébullition, puis laisser cuire 1 bonne heure à petit bouillon. Saler à mi-cuisson.</p>
<p>Éplucher et émincer une échalote.<br />
Tailler le lard en lardons.<br />
Couper chaque queue de langouste en deux, vous aider d’un ciseau pour la carapace ! Puis, détailler la chair en gros morceaux.</p>
<p>Dans une cocotte bien chaude, faire revenir 2 minutes les lardons et l’échalote. Ajouter les morceaux de langoustes et les saisir des deux côtés.</p>
<p>Ajouter les Haricots Tarbais, une pincée de piment d’Espelette. Mélanger et laisser cuire 10 minutes à petit feu.</p>
<p>Au moment de servir, émincer un peu de persil et ajouter quelques grains de groseilles ou de grenade qui apporteront une note de fraîcheur.</p>

Arroser de jus de citron, saler et poivrer.<br />
Ajouter l’huile d’olive, les herbes hachées, une échalote hachée et le mélange câpres, cornichons, anchois.<br />
Dresser en assiette dans un cercle, d’abord les Haricots Tarbais puis le tartare de truite.<br />

Couvrir l’intérieur d’une terrine avec un film alimentaire puis garnir le fond et les 2 grands côtés avec les tranches de fois gras.<br />
Peler et détailler la tomate, l’avocat et la mangue en cubes.<br />
Egoutter les Haricots Tarbais en réservant le jus. Chauffer 1 dl de ce jus et y faire fondre les feuilles de gélatine préalablement trempées à l’eau froide. Verser sur les Haricots Tarbais et assaisonner.<br />
Ajouter les cubes de tomate, avocat et mangue et mélanger le tout.<br />
Garnir l’intérieur de la terrine avec cette préparation.<br />
Refermer hermétiquement la terrine avec une tranche de foie gras.<br />
Mettre au réfrigérateur pour quelques heures.<br />
Mixer la demi-mangue et la relever d’un trait de vinaigre de cidre, un peu de sel et de piment d’Espelette.<br />
Démouler la terrine et la trancher délicatement avec une fine lame tiédie.<br />
Disposer chaque tranche sur une assiette et garnir d’un grand trait de coulis de mangue et d’un peu de Haricots Tarbais.</p>

&#8211; 120 g de fromage de chèvre mi-vieux (picodon)</p>

<p>Laver et hacher les herbes fraiches, émincer finement la gousse d&rsquo;ail, couper les tomates confites en petits morceaux. Écraser ensemble les fromages de chèvres, mélanger pour les rendre crémeux, ajouter les herbes, l&rsquo;ail, les tomates, sel, poivre, mélanger, rectifier l&rsquo;assaisonnement.</p>
<p>Déposer une feuille de raviole sur une planche et mettre une cuillère à café de farce au milieu. Avec un pinceau, humecter les bords de la pâte avant de la replier en deux pour former une petite enveloppe, appuyer pour souder en prenant soin de chasser un maximum d&rsquo;air. Réserver les ravioles, au fur et à mesure, sur un grand plat légèrement huilé, une à côté de l&rsquo;autre, ne pas les chevaucher.</p>
<p>Égoutter les Haricots Tarbais, les mettre dans le bouillon et laisser cuire tout doucement. Couper les carottes en petits dés et émincer les oignons nouveaux. Au bout de 25 minutes de cuisson, ajouter les carottes et une pincée de sel, laisser encore mijoter, à feu doux, pendant 20 minutes. Ajouter les oignons nouveaux dans le bouillon et y pocher les ravioles 2 minutes. Servir bien chaud avec quelques fleurs de fenouil.</p>
